
Preheat oven to 425
Cut 3 medium zucchinis into 3" sticks.
Place sticks into a colander and let drain for 1 hour to shed excess liquid.
After an hour rinse thoroughly & pat dry.
Mix Until Thoroughly Combined:
1 cup of bread crumbs
1/2 cup freshly grated Parmesan Cheese
1 1/2 tablespoons Italian Seasoning
Beat 2 large eggs in a bowl & dip one stick at a time.
Place sticks on lined baking sheet, sprayed with olive oil non stick spray.
Bake the sticks for about 12 minutes, until they start to brown.
Remove from oven, and turn each stick over.
Bake an additional 12 to 16 minutes, until the sticks are speckled golden brown & crisp.
Serve with your favorite dip ~
